Verjus Marinade for Grilled Chicken and Fish
The presence of sugar in verjus adds a nice dimension to marinades, especially for white meats like chicken. As the meat cooks, the sugar caramelizes and gives the meat a nice color as well a great flavor. The chicken or fish fillets can be marinated overnight in the refrigerator in a mild marinade like this.

Ingredients
1 cup Verjus Blanc
1 tablespoon Dijon mustard
1 clove garlic, minced
1 teaspoon olive oil
1 teaspoon herbs de Province

Instructions: Whisk ingredients together in a small mixing bowl. This marinade will keep for a week in the refrigerator.
