Laura Chenel's Goat Cheese Salad Dressing (About
1 cup, enough for 10 salads)
Use sturdy greens such as romaine, radicchio, or endive for this dressing.
Ingredients
4 ounces Laura Chenel Chevré
2 tablespoons sour cream
1/8 teaspoon garlic, minced
1 teaspoon fresh thyme, finely chopped
2 tablespoons parsley, chopped
Pinch black pepper
1/3 cup Verjus Blanc
Instructions: Soften the chevré in a small mixing bowl with
the back of a wooden spoon. Add the sour cream, garlic, herbs and black
pepper. Whisk in the verjus. Allow the dressing to develop flavor for
a couple of hours before serving.
